Mountain Summit

Hello! Never joined a forum before, but I want to find the right hike for my boyfriend and me. We are going on a road trip from Grand Rapids MI to St. Petersburg FL. We don't plan on making it a direct trip, we want to explore, hike, make pit stops. What would be ideal is to do a one or two night mountain summit. I went to Big Sky MT last summer and my friend that lived out there took me on a 20ish mile round trip mountain hike (one night). I don't remember the exact elevation, but it was doable with some good hiking boots and that is about it (besides obviously the stuff we needed to camp). So my question: can any one recommend a similar hike? I don't think we'd like to go any further east than Roanoke VA... but if its the right trail, I'd make exceptions. Thank you!
